Can I put the PressureDisk in direct contact with the product (sauce, oil, preserves etc.)?

The PressureDisk is built with food compatible materials. It can be inserted directly into a jar in contact with the product, be it solid, semi-solid or liquid. It is very important, however, that at the end of the process the logger is cleaned very well, especially in the photo above, with only water. DO NOT insert anything into the hole to clean, just run some water. If the product remains in the hole, where the pressure sensor is located, there is a risk that by continuing to settle, the sensor will become blocked and the pressure will no longer be detected correctly. For the same reason, nothing must be inserted in the hole to clean it as there is a risk of annealing the sensor itself.
